Yuver Andres Arambulo Castro’s 18 Hectare regenerative organic farm, Finca El Paraiso, is located in the central valley of the Tolima department in Southern Colombia, just outside the community of Siquila. We have worked exclusively with Yuver since 2020 to separate his best coffees as single farm microlots.
This coffee is the also the first Regenerative Organic Certified coffee to be imported into Australia. We are thrilled to champion Regenerative Organic Certification (ROC) as the pinacle of certifiable organic farming and the only certification that guarantees the highest level of soil health, biodiversity and farm community welfare.
This coffee is the perfect showcase of a high altitude, highly refined Caturra lot, which has been grown under shade and handpicked only when ripe. This lot was dry fermented as cherry for 12 hours, then depulped on-site and fermented under water for ~18 hours in tanks (depending on pH).

Our recommended recipe for Pour Over Brewing at home or in-cafe.
We start with a 60g water bloom for 30 seconds.
This recipe is developed on a Kono 01 Size dripper with Kono 01 filter papers. Other equipment configuration may require slight recipe modification. - 15g

Yuver's farm, Finca El Paraiso - "Paradise" - is truly a model for how regenerative organic farming can look like for smallholder producers throughout Colombia. Being one of the first coffee farms to achieve Regenerative Organic Certification in all of Latin America, Yuver and his family are committed to growing coffee with no synthetic inputs and using regenerative agricultural practices. Their preposterously high growing elevation (at 1930 masl) provides an elegance and crispness to the cup that we have been enjoying the past four seasons. Yuver is continuing to work on processing methods (including non-washed techniques) and we are seeing a marked improvement in cup quality year on year.
